If the Greek gods were doing the Atkins diet, no more nectar and ambrosia. Zeus would be drinking Maltitol. Maltitol is the essential ingredient in so many of Chef Allan’s sweet delicacies its hard to count. Though it has some carbs, it is a strange sort of carb than we are used to dealing with. Maltitol doesn’t absorb like other carbs. Some people estimate that 1% of "rated carbs" absorb. Our experience with both diabetics reading their blood sugar levels and dieters reading their ketosis, is that the amount of carbs is negligible. For low carbohydrate diet recipes, it is far superior in cooking/baking than any of the artificial sweeteners, making your foods taste like, and prepare as if, they were made with real sugar.
